Country Dale wtf?

Do you guys also have these small one portion UHT milk things called Country Dale in your offices?
I was looking at one today. It says "UHT Skimmed mile with non milk fat".
I don't understand. Do they remove the milk fat, then add other fat, then package it up? Why don't they just leave the milk fat in it? Are they creating unnecessary work for themselves?

forgive my naivety, I always thought if something was labelled as "milk" that it is generally milked from an animal. Are you telling me that this st is just plain water with stuff in it, and it has no connection with an animal apart from the fact that the fat they add to it may be from an animals anus?
