Brown sauce on the egg and black plate are of concern, but I would happily eat that if offered.

Looks like you forgot to cook the black pudding laugh Looks good though, would eat that, good to see a proper portion of mushrooms on a plate.

I usually plate everything up on a pre heated plate whilst I'm frying my egg/s. I am st at frying eggs for some reason, I always crack it into a bowl first and then lower it into a small pan to fry. If I try cracking the egg straight into the pan I always fk the yolk up laugh

You're doing it from too high up or your eggs are old. Old or crappy eggs instantly break the yolk the moment you try to do anything with them. Try really fresh eggs and you should be okay, and turn the heat down so the fat isn't bouncing out of the pan then you can break them in the pan rather than from some height above it. smile

Nah, I always used to do it just a bit above the pan and into frying butter. I suspect it is because I am a bit cack handed, but my into a bowl method works for me now and I don't have to get the missus to do the eggs anymore laugh

Are old yokes more likely to break, ive not heard that before? Ive cracked open eggs of all ages and ive never had an issue with the yolks breaking.

I would say that its more likely that you are conscious of the hot pan so are concentrating more on that, and not getting splashed and burnt, than you are on cracking the egg.

Get the pan warm, but not hot, then hold the egg just above the oil and crack it like normal.

You might not, but it's well known.

Brabus : where are the eggs coming from prior to breaking them? Are they from storage at room temp or from the fridge? Cold eggs are much more likely to break their yolk too as it makes the membrane weaker so that may be a reason if you're taking them from the fridge.smile

They're usually room temperature when I break them open. As I said, it's just cack handedness when I'm in the middle of cooking, if I crack an egg into a bowl before I start cooking it is always fine.

Like I said, chances are, at the back of your mind you are concerned about splashing hot oil and burning yourself. Break the egg and lower it in more gently, it wont splash and shouldnt break.

I use butter to fry eggs so I don't think I'm too worried about that. My bowl method works for me, so I'll stick with it biggrin

I'll have to do a big fry tomorrow as a penance for making about 10 posts without a photo lol.

I’m the same wack with knife and break into pan ,I’m not good at it ,The reason I flip eggs is cause of a mate of mine who won’t touch eggs,he told me why as he was once served an under cooked egg which made him gag ,guewy stuff (cum) ,for some reason they never look done do I flip it over for a few seconds, moral of story is always get extra eggs whilst out with him,as server forgot

Bacon, sausage and scrambled egg all look very nicely cooked. Shame about the beans and the general presentation!
