OK, here's my favourite way.

Take about 1/4 pound of SALTED butter, place into a saucepan and gently melt turn up the heat gentle as you are trying to clarify (removing the solid fats)from the butter. A light scum will appear, skim of all the scum until the butter is clear. Job done.

Take a couple of cloves of garlic, crush and chop finely.

Next take a large frying pan pour in the clarified butter heat and add the crushed garlic, if you like a bite add a few chilly seeds to taste.
When the butter is at a gentle sizzle add the Frogs legs and gentle fry for about 5 minutes turning during cooking.

Don't try to do too many at a time, better to do two small lots keeping the first serving warm in the oven.

Serve piping hot with he obligatory French bread for dunking. lick

HTH. smile

Here's my favourite.
50ml approx oil
8 pairs of frogs legs
1 tab.green peppercorns
3 red chillies,sliced lenghtways
3 inches galangal, ginger will do cut into matchsticks
2 teaspoons fish sauce
1/2 teaspoon chopped palm sugar, brown sugar will do at a push
large handfull of thai basil, sweet basil won't do

heat oil in a wok until very hot.add frog's legs and peppercorns and stirfry over high heat for a couple of minutes.
add chillie, galangal, fish sauce and sugar.mix well and cook for another minute, stir in the basil, take off heat and serve with slotted spoon.serve with a little rice

if you don't like frog use 8oz diced boneless chicken.
