Plnning to roast one this evening, but should I put bacon over it as I would pheasant?

Get a good stock off the carcass and then, personally, I'd go for a ham and pea soup. Mmmm.

I always put the bones/carcas in a freezer bag and save them up till I have 4 or 5 and make a good stock! made a batch of chicken, guinea, duck and pheasant stock! and is lovely!

I was thinking more gamey than that. Winter veg with some parsnip crisps on top perhaps...

To me they are better than any chicken or Turkey at Christmas. Not as fatty as goose either and you get a lot of meat by comparison. Yummy.

Also, you can eat a whole one and not feel too guilty.

Just the one! my dog caught it so I thought I'd have a taster! I had the two small breasts and the dog had the other bits! was quite tasty!

I have had Coot before too! but I had 6! I fried up the breasts in butter and served them with mash and homemade gravy! mmm
