need a really good fudge recipe- tried to make Tablet the other day and it went really wrong- too much muscavado sugar- and overcooking it didn't help.
Clotted Cream Fudge would be perfect!
I don't have it with me at work, but I've got a foolproof receipe which uses mainly icing sugar and caramac bars - I'll be cooking up a batch at the weekend for pressies!Clotted Cream Fudge would be perfect!
I'll post it up when I get home later

OK, here is the information, as promised:
1 lb icing sugar
4 oz butter or margarine
4 oz caramac
3 tbsp milk
Put it all in a bowl and microwave on high for about 3.5 minutes. Take it out and give it a good stir, if it's not all bound together, microwave for another minute or so.
Put it in a greased tray and refrigerate for about an hour. Cut into pieces after about 10 minutes, and put back in the fridge until set. Eat, enjoy and don't tell people how easy it was!!
This Christmas I will be making:
Plain fudge
Baileys fudge (use baileys instead of the milk, but watch it doesn't get too hot!)
Walnut and maple fudge (put in after the microwave)
Rum & Raisin fudge (use rum flavouring and add the raisins after the microwave)
Chocolate fudge (add chocolate and some cocoa powder in the bowl before the microwave)
Whisky fudge (not made this before, so not sure whether to add it before or after the heat process!)
Where you add fluid to the mix, use a little less milk.
It should keep for a couple of weeks in the fridge in an air tight container. I've bought cellophane bags and ribbon to put them in and will be giving them out as presents, along with chocolate dipped peppermint creams, honeycomb, and coconut ice!
Post up here if you try any other variations!
