I have heard of this as it is meant to aid the digestion. A few people I know also eat pickled vegetables with the fondue for the same reason. I am interested how much vinegar she pops into the fondue though as most people just use an acidic white wine.

We used to do something along these lines (but with more cider), Gruyere and Cider:

  1. 4 cups coarsely grated Gruyère cheese (about 1 pound)
  2. 1 tablespoon plus 2 teaspoons cornstarch
  3. 1 cup hard apple cider
  4. 1 tablespoon apple cider vinegar
  5. 1/4 teaspoon salt
  6. 2 tablespoons Calvados, applejack brandy, or poire Williams (clear pear brandy)
Dip in crusty bread, cooked chorizo or some kind of spicy preserved sausage. Lovely. smile
