I always add a bit of salad cream to give them a bit more flavour. Crazy! wink

Mayo and (if using a cheap one) a pinch of mustard powder.

But if you can find really good shop bought mayo (try Mayonnaise Delouis Fils from Waitrose) then that's all you need.

I'm partial to Hellman's REAL Mayonaise.

On no account consider their "reduced fat" one. It has semolina in it and tastes vile.

This mayo really is streets ahead (but the tartare sauce, caesar mayo & other variants I've not liked) - but if I don't have any of this in, I would much rather use bog standard Heinz salad cream on an egg mayo sandwich, rather than any other mayo brand.

The best way is clearly half and half. And a thick slice of hand carved ham on the bread before you apply the egg mayo.

I like a drop of two of Tabasco or other hot sauce. And prefer the French style mayo if from a jar, but rather homemade.

I've always made it with mayo, hence the name 'egg mayo sandwich' as opposed to an egg salad sandwich that has sliced egg, salad and salad cream.
