I love leeks, but they have to be cooked enough it makes me shudder to even think of the squeaky feeling on your teeth as you bite a not-quite-done one and the inner rings slide over each other.

Put some pasta on to boil.

Chop and fry 3 big leeks until very soft. In the meantime, put 2 or 3 smoked haddock fillets in a foil bag in the oven with butter and black pepper.

Add creme fraiche and some capers to the leeks.

Add the sauce to the pasta and make sure the pasta is well coated. Break the fish into it and mix it together a bit. Put some brown breadcrumbs and parmesan on the top and chuck it under the grill for a couple of minutes.

Tasty, quick dinner.

How odd! In fact the other half of the leeks went into a smoked Haddock chowder, with potatoes and sweetcorn. It was very nice, but I'll give yours a try next.

Leek, onion, garlic and potato rosti with a nice duck breast with a pot of bernaise sauce on the side is a favourite in my house smile

Awesome.
Wrap some ham round the leeks (assuming your not cutting them up) before you put the cheese sauce over. Some breadcrumbs help browning/crispy top yum

Leeks. White sauce. Cheese. Done.

Particularly good with bangers and mash. You won't get through a vast number this way though.

Slightly OT but something you cannot beat for cost and nutrition is to make with whatever roast/whatever you have a stload of steamed leeks, broccoli, green beans, carrots etc, with cheese sauce. Freeze up a stack of these in plastic and there's no excuse for not getting your veg. And tasty to the point of leaving a bit of steak on your plate before leaving them. And I'd hazard a guess that it'd be a great way to get kids eating veg.
