Put some pasta on to boil.
Chop and fry 3 big leeks until very soft. In the meantime, put 2 or 3 smoked haddock fillets in a foil bag in the oven with butter and black pepper.
Add creme fraiche and some capers to the leeks.
Add the sauce to the pasta and make sure the pasta is well coated. Break the fish into it and mix it together a bit. Put some brown breadcrumbs and parmesan on the top and chuck it under the grill for a couple of minutes.
Tasty, quick dinner.

Slightly OT but something you cannot beat for cost and nutrition is to make with whatever roast/whatever you have a stload of steamed leeks, broccoli, green beans, carrots etc, with cheese sauce. Freeze up a stack of these in plastic and there's no excuse for not getting your veg. And tasty to the point of leaving a bit of steak on your plate before leaving them. And I'd hazard a guess that it'd be a great way to get kids eating veg.
