Hi chaps,

I've recently started trying cook and enjoying it, salt and pepper is boring but not sure which basic and "adventurous" spices to have... too many to pick!

I enjoy meats and not much else smile

Cumin is a good place to start if you are getting into spices. But what are your favourite flavours, spicy, salty, sour etc?

Generally speaking, look up recepies you like and they'll tell you what spices you need.

I love celery salt but no idea if it would work with meat.

I'd use ready-made sauces if you've never tried anything more adventurous than S&P. My favourites: 'Geeta's' lime and chilli pickle, any form of Tabasco, and Reggae Reggae sauce.

Cayenne, paprika, cumin, coriander, turmeric, black pepper are a must for any spicy food fan.

Herbes de Provence are always useful as is fresh basil.

Bit of garam masalla never goes a miss in my cupboard, often toss chicken in it before putting it on the griddle pan and that works well on its own. Use it in loads of stuff though.

Generally my basics are;

sea salt, pepper, chilli powder, cumin seeds, coriander seeds, mustard seeds, garam masalla, tumeric, paprika.

Chinese 5-spice is a good staple, as is Cajun.

First thing I thought was cumin, but thats been suggested already. Excellent with lamb. Also some fresh Ginger, can work well with chicken, pork and stirfrys.

Depends what you are into. Garam Masala is a staple for any curry lover. A jar of Herbs de Provence is essential for Italian food. 5 spice for duck/Chinese.

Plus kitchen essentials like garlic powder, chilli powder/flakes, smoked paprika, and essentials like rosemary, sage etc.

another for 5 spice. i'll frequently make a paste with 5 spice and a bit of oil and use it as a wet rub for bbq meat. especially good with pork chops.
