I also did a duck like Mr P on the pro q smoker, but i tried mine smoked instead (used maple wood chips).

In the water i put ginger, soy, spring onion and garlic. Cooked for 8 hours and crisped up for last 10 mins.

Quite nice results and fairly smokey taste!

Same here, waaaay too hot, no rain for ages. About 31C here. Supposed to be cooler tomorrow...26C!!

Did someone say ribs ? biggrin

12lb of baby-backs rubbed and ready to go.





Rub
1 cup Brown Sugar
1/2 cup Paprika
2 tbsp Chilli Powder
2 tbsp Garlic powder
2 tbsp Onion Powder
2 tbsp Salt
2 tbsp Pepper
2 tsp Cayenne Pepper

WSM fired up. Got 4 nice chunks of Hickory soaked and ready to go on...



See you in 2 hours when they come off to be wrapped in foil and braised for another 2 hours....

Don't be ghey - its 30C here at the moment - just bung some stuff on and check it every 30 mins !
Then retire with a cool glass of something tasty....

When it's so hot that I really don't feel like eating (like now), I make things in pots like rillettes de porc and patés to pick at of an evening with crusty bread, a crunchy cornichon or two and a glass of something pink and cold.

Just finished potting up some chicken liver patés with a rosemary and thyme infused butter topping to seal (which I could have clarified, I know):

Also made some Jalapenos, stuffed with creme cheese, wrapped in Bacon. No room on smoker sadly, so did them in the oven

They absolutely fell apart when I tried to cut them up
