Hey James, thanks for the follow I use a GMG pellet smoker, it took around 2 1/2 hrs to smoke until an internal temp of about 165-170sh, then i finished it over steam!

Not really a fish eater and had fallen out of love with BBQ a couple of years back.
Going through some changes at home so thought I'd try and get back in.
Bought a load of lumpwood and started reading up on some BBQ sites.
Thought I'd try something different. Was really nice albeit a little fiddly but all fish are like that.
I have confidence in the supplier so may try some more exiting stuff next time.
p.s Just polishing off some Pork belly bites and BBQ beans. Got some Scotch Eggs in the fridge ready to go on later.

Just a brief heads up on meat thermometers. For the long slow smokes have been using a Maverick ET732 dual sensor wireless thermometer and it's been great, still is. Newer models are available, but obviously also need an instant read thermometer and have been finding that the device borrowed from MrsF's baking kit is anything but instant read.
So have invested in a Thermapen following reviews on this site, http://kungfubbq.co.uk , every bit as good as recommended, not cheap, the Thermapen 4 retails at £64.80, however the heads up is that the Thermapen 3 in see it from the International Space Station orange (discontinued colour) is still a fine bit of kit and is on offer for £30, down from usual £51.60.

If you want a decent dual probe thermo that wont break the bank I can recommend the Inkbird IBT-2x for £25.

Decided to make myself a BBQ table/trolley during the summer.
Started with this.
No plans and only a drill for power tools ended up with this.
Sourced an outdoor bench cover from ebay which fits nicely.
Grooved the inside of the doors so I could have removable tool rails.
And plenty of room inside to store all the gear.
Minimal cost for wood, stain and wheels. The sides and base are from free pallets.

I've been posting in this thread recently about my cooking exploits at home.
Anyway, after a bit of socia media'ing, i've had a few friends ask me to cook for them, which then gave me a bit of an idea, to potentially branch out from just home cooking.
Now, naturally, this meant a trip to 'the internets', namely Ebay, Gumtree, forums & Facebook Marketplace.
I had the idea of buying some form of old metal cylinder, ideally on a trailer, or even an old water bowser & converting it to something like what the company BBQ mates import.
As it was only an idea, i didn't want to spend a huge outlay on anything in case it didn't go anywhere, or i got bored, plus, i wasn't allowed.
Anyway, it was a sunny August evening & one of my friends had won a Facebook competition for a complimentary 8 pint beer tower at a local bar with a table to watch the opening game of the Premier League season.
After a few warm pints of complimentary Carling & the purchase of a second 8 pint beer of Amstel, some egging on, some quick man-maths & a message via Facebook Market place, i'd agreed to buy a BBQ trailer for peanuts.
A price was agreed, as was a time & date to collect.
24 hours before going to collect, the seller messaged to tell me that the previously 'un-used, custom made trailer, just moving on because he needed the space as it was in a mates garage, turned out to be a rusty pile of borederline scrap that had been kept outside for the past 12 months', however he was willing to half the price. Result, i like cheap.
Anyway, not to be deterred (AKA prove the missus and everyone wrong), i set off to collect, it all seemed a bit dodgy, the seller had left this unit 'at his mates house' & i was to collect & post the money through the letter box, however i decided i wanted to try and be more optimistic in life so set off anyway.
I turn up, to a house, that can only be described as a 'bomb' site.
I figured the seller had got the numbers on the email the wrong way round, as there wasn't a BBQ trailer anywhere in site, so i set off up and down the road looking for a different place with the aforementioned trailer on the drive, to no avail.
So i messaged him, no response, i called, no response, left it 20 minutes & was about to set off home rather annoyed, when i got a message back:
'My mate says it's round the back behind the skip, you'll need to move all the junk & bins out of the way to get it'.
He was right, there was a load of absolutely useless rubbish in the way, i was also expecting someone to hit me with a crow-bar.
So with the help of my trusty 7 year old sidekick, we managed to pull the (full of rusty water) trailer out, hooked it up & off we went.
I towed it home, persuaded a friend who can weld, to weld the hinges back on, a good power hose down, a few tins of paint & we have something that resembles a BBQ trailer.
My dad volunteered me to cook for all the staff tomorrow at our workplace, so it's getting it's first food run tomorrow for 35 people.
(I have since painting it burned it in a couple of times).
