Curious.
We had filet last night so I thought I'd use the charcoal, not the Gas grill.
Filled the chimney - got it all up and running relatively well, but before long in a medium sized Weber kettle the heat had gone as had most of the charcoal....


Similar to above. Resturant bag size of charcoal from our local farmshop as it happens. Maybe double up on the volume......

Those ribs look fantastic! I'll be trying this sometime, never cooked beef ribs, only pork.

Dead easy to cook, racks work better than singles I find. Slather of hot sauce, salt and pepper rub and on they go. Gave them a spritz with beef stock after around 4 hours or so and took them off when probing really soft and rested them in foil for an hour.

Experimented with smoking some duck legs yesterday. Unfortunately, I slightly overcooked them but still had a lovely flavour. Also caught the fat so have a bowl of smoked duck fat to play with.

I’m currently having a custom gravity fed smoker built... which is fortunate as the day after it my GMG DB pellet smoker went down (it is only the igniter which is about £25 & a 10 minute fix), but, it means I will have some space for the new beast.... the guy who’s building it has said it’s going to be in excess of 300kg 🙈

That fat will be incredible for potato’s. If you have enough fat you could do smoked confit duck legs.

The only charcoal that have used that is consistently good, is the Weber stuff. Both lump and briquettes are always excellent.

I bought some Green Olive stuff a month or so ago and while the top 25%+ is nice and works well the bottom half of the bags were ste.... tiny bits and loads of dust which isn’t what you want for a chimney starter as it just blocks the airflow.

I've got three bags/type of charcoal now.

I use Big K lumpwood for really hot grilling, and if I use the lotus grill. Weber briquettes for most normal BBQ purposes, and I have pro Q coconut briquettes for long cooks as they last FOREVER!

Im going to the Butchers Saturday, what joints should I try to buy, and what weight for 2 people? Also, they need to be able go in the freezer before being cooked - something I know ruins a good steak.......

brisket?

Seems pretty robust and a skoosh to do stuff. The benefit if you over do on buying too big is it means after you cook Sunday dinner Mondays sarnies are flipping wonderful.

Anybody have a grill table or similar? Looking for a kind of half way house between nothing and an outdoor kitchen. KJ and a Weber is my kit.

LNS was the main reason for purchase tbh.....comes with the new smoker ring and plate.....
