No snobbery on that - that looks pretty much perfect!
It was. We do have a portable bucket bbq, but we forgot to take it away with us. So disposable bbq it was. On the day, I also forgot paper plates and cutlery (though not a lemon and a sharp knife) so they were eaten with fingers off the bbq packaging. Kids went a bit feral! Actually it was perfect.Harry Flashman said:
This went well - the reverse sear method is genuinely idiot proof. I only have steak pictures, sadly; forgot to capture the pork shoulder. Which is a shame, as after 6 hours on the barbecue I finished the crackling with a butane weed wand and it came up like salted, piggy popcorn! So, to the steaks: each one of these was 900g, including the bone.

after the slow rosemary smoke cook to rare, left it under foil to get up to medium rare, then seared the steaks on a very hot cast iron plate preheated on the gas barbecue.

Reverse sear for thick steaks is so very tasty...
Roughly how long do steaks like these take to cook before searing?IMG_20200808_142915 by baconrashers, on Flickr

Attachable Grill Temperature Regulator
do love a gadget, anyone had dealings with one of these...supposed to take away the guess work, or clutter my shed with rest of stupid tat
Hoping to use it this weekend, but haven’t decided what to cook yet.
Found this useful, for working out where to align the numbers.

with my grill at 150C (hotter than I would like, but this is what it seems to settle at using the charcoal snake method and will not go lower even hen you mess around with air vents), about an hour.I found resting them under tented foil for 15 minutes works, but you could of course keep them in a warm oven. I am lucky enough to have a pretty precise one so can sit them in a 45C oven for as long as I want to keep them warm before searing.
To be honest with you, if not smoking them, I would just do the slow cook in your oven on a wire rack as the charcoal gives no advantage in flavour without smoke added. Same effect, then a very easy sear on a very hot heat on the barbecue, or better, a chimney starter for proper sun temperature searing..
BBQ fraternity, your collective thoughts please...
I’ve got a friend’s birthday coming up and I want to get him a present. He’s fairly well kitted out with a smoker, and bbq (both home made so no Weber specific accessories etc) so has all the basic kit.
Can you think of something you’d really like, budget up to £30, able to be ordered online and delivered to him?
I’m thinking maybe really good rubs, hot sauce, bbq gadgets that kind of thing? Can’t do meat delivery as his schedule is all over the place.

Have you tried contacting Aldi customer services for a replacement?
How busted is it? if only in half then wrapping in foil will do as a temporary work around.
Pizza stone might be also worth looking at?
Think my stainless one cost me £50 but has a brushed finish and doubles as a pizza steel.
Would imagine you could get something in steel cheap enough on ebay.

Just busted my ceramic heat deflector in my kamado. Does anyone have any recommendations for a replacement or a source of a cheap / battered 28cm steel disc as a replacement?
