Decided to do a Tuesday BBQ as the sun made a rare appearance, but being Tuesday I wanted a healthier route than usual burgers and sausages.

Made my own turkey burgers and marinated chicken kebabs.
Only second time that I’ve made either of them, and I was really very impressed with how it all turned out.
Decided to make my mayo as well, which might have been our downfall as Mrs UTH and I managed to get through half of what I made. But it was very good, especially for my first ever homemade mayo.

Too much lettuce, ruined the presentation.

You guys talk about those little portable bbq’s some times. How do you go about lighting them? I imagine a chimney is as big as the bbq and needs too many coals to work well to fill the bbq.

Are there little coal bags for them or what?

Basically wanting to gift one, but also know it’s easy to use/setup

Salmon, marinating away! Ginger, garlic, soy sauce, rice wine, rice wine vinegar and honey. Skin about to be dried and salted for crispiness.

Anyone use a rotisserie with their kettle?

Thinking of getting one, but not sure how much use it will be. I can see it being more hassle than it’s worth.

I use my rotisserie a lot….. joints of beef/lamb/pork or whack a chicken or two on. But by far my favourite is chucking wings and drumsticks into a basket ……. Simple food but omg so good!

Rotisseries are great - Christmas rib of beef (took off the bone and tied for an even cook):

Crisping up the skin in the plancha. It was delicious, and so quick to do!

I "cheat" and use gas, mainly as when you are out and about you don't need to wait for the coals to cool down enough to be safely disposed of before packing the BBQ away.

I use a lotus grille when out and about. Just took it camping for the L2B mini run. It uses a small basket of charcoal in the middle, which is easy enough to take out with tongs and pour a bit of water on to extinguish and cool if I'm in a rush to pack away. It took about 15 minutes from lighting to having a pan of boiling water for a couple of cups of tea. I can fit the required charcoal inside it for transport, but nothing like as compact as a small gas burner, and little pan.

I've got a weber Q2000 as well, and I've taken that to a friends before, but with the big bottle of gas, it takes up all the space in either of the small hatchbacks I own (including folding 2/3rds of rear seats down).

The ones in my pic were given a dusting of a&o the general, then a drizzle of oil and then left to cook…

The honey chillis was on the chicken and was bloody lovely .

For potatoes I make a tin foil bag, then add new potatoes, rock salt, olive oil, rosemary, garlic and red onion. Sometimes some chillis too. Seal the bag by folding over the end a few times and cook in the oven or on the bbq until the spuds have softened.

Sorry for poor pics. Even if I do say so myself I nailed burnt ends (pork belly) today. There would be more pictures but every stage of the 6 hour cook was too good not too sample. Threw on thighs for a low and slow smoke and cook that also delivered. I will write it up sober.
