Brown off the meat
Take the meat out of the pan and set aside
Add rough cut onion, celery, carrot and leeks cook to soften
Add in a bouquet garni, I usually go for some thyme and parsley stalks, some salt and pepper, careful not to over season as the sauce will be reduced
Deglaze with a splash of red wine vinegar...no more than a table spoon
Give it a few minutes and add in a bottle of red wine, less a glass to drink whilst cooking
Reduce the red wine until there is very little left and starting to go a little sticky
Transfer the beef and mirepoix to the slow cooker
Cover with good beef stock or veal jus, I usually use 2-2.5 litres
Cook for 8-10 hours low
Strain off the liquor and then reduce in a plan until the sauce is lovely and sticky, if the stock if still thin add a little cornflour (1 tbs to 5 tbs water and mix before you add a little and check the thickness.

If you want extra sweetness you can add in some tomato puree, but cook it off before adding the red wine vinegar or it will be bitter.

Edited to add I did 1.5 kg of ox cheeks, cut into 6 cm ish chunks and then 6 beef short ribs.

With no mains power on the boat I’ve prepared a Chilli and sat it to slow cook overnight next to the wood burner. Fingers crossed this works.

Did something very similar to the beef short rib recipe above earlier this week - browned ribs with some leek and carrot in the instant pot. Heated beef stock in a saucepan with cloves, cinnamon stick, cassia leaves, star anise, fennel seeds, dried bullet chillies, sliced ginger, garlic, brown sugar, dry sherry, rice vinegar, soy sauce. Poured over the ribs and slow cooked overnight and allowed to cool. Brought back to a simmer before serving, added spring onion, pak choi, thick udon noodles. Turned out just how I wanted it.

Funny enough I did the Honey Garlic & Noodles recipe of his last night, it was very tasty and so simple to put together biggrin

How did this work out heat wise? It feels like it'd keep it warm at best.

Must admit, I'd be nervous about that fermenting instead of cooking. Would want to stick a thermometer in it to reassure myself.

It was more about conserving gas (not having it on the boat hob or in the oven) and slow cooking for 24 hours. That’s a 4kw wood burner and I alternated putting it on top (overnight when we shut it down) to being at the side when the fire was full on. It worked out well and was enjoyed, even by other half who is fussy eater and not aware of the coffee and dark chocolate I added smile

I've had Puy lentils in mine.

The margin of error between 'buckshot' and 'mush' is a fine one, which the slow cooker for 4 hours on high navigates perfectly.

I'm intending them to go into a garlicky warm salad of honey-roasted butternut squash, feta, cherry tomatoes, and rocket.

Not going all veggie / car-hating Communist, just trying to eat less meat and eat more cheaply.

Definitely slow, but not in a slow cooker. Short ribs on the Big Green Egg for 8 hours at 120C, internal temp 90C and then 15 minutes to rest.
Served with aligot.

Anyone tried to do pasta in a slow cooker. I like the look of this lasagna soup

One thing I have never cooked in the slowie is pasta. Just no.

But as a gloopy soup I think it would work.

It only goes in for the last 30 minutes. Its never going to be perfect but should be ok. Thinking of adding pasta to a chilli to save doing rice seperatly.

As close as chilli is to bolognese (in a basic level of mince, passata etc), having pasta with chilli seems wrong, and rice is so easy to cook.

One of my favourite (and easiest/quickest) recipes for a slow cooker is to chuck a few chicken thighs, sliced mushrooms, chopped red pepper, some garlic and a stock cube into the slow cooker. Cook on 'high' for 3 hours before pouring most of the water/juice out of it. Shred the chicken using two forks and stir in some creme fraiche. Leave it for another 15 minutes or so on high while you boil some rice to go with it. Yummy!

Stud with garlic and rosemary and set it on a trivet of chunked celery, carrot and onion.

Splash of red wine just to cover the bottom, as a lot of liquid will come out of the meat and veggies.

8 hours on low.

Pour off the juices into a pan and thicken with lumps of butter and flour mashed together.
