Does anyone know of a decent Cassoulet-esque slow cooker recipe?
I've done the usual stews, chills, tagines and curries and fancy trying something a little different.
I haven't tried this in the slow cooker but it's certainly one of the best I've ever come across-I've done the usual stews, chills, tagines and curries and fancy trying something a little different.

Flavours are immense, pork belly is wonderfully tender.

That looks good, though I've never been sure about pork bellyhttp://www.bbcgoodfood.com/recipes/1940707/chorizo...

I bought a Common & Garden 2kg pork leg from Sainsbury's and followed this recipe

It turned out epic. Really, really crispy crackling and fall-apart pork. Turned out way better than roasting it, in fact I'll be doing it this way going forward !

Just made a beef stew in the slow cooker, turned out really dry (plenty of liquor but the meet was dry). Not sure what I did wrong so will try some lamb next time.
What cut did you use? lean cuts will tighten/toughen up rather than break down, or perhaps you simply didn't give it long enough.rsbmw said:

Guessing you used braising or stewing steak they sell in supermarket packets? I did the same yesterday and they ended up like bullets. The best cut to use is shin off the butchers counter or alternatively chop up a lump of brisket.
I'm doing a beef in red wine stew in the slow cooker at the moment. Put it on 'high' at 0900 for the 1st hour then 'low' whilst I was out for 5 hours and I've returned it to 'high' now as I'm getting impatient. Diced supermarket stewing steak marinated in red wine/thyme/bayleaves overnight in the fridge. Chopped onion/celery/carrot base with 1/2 bottle Rioja added. I've also just added a crumbled OXO cube and 1/4 tube of tomato puree and will soon be adding a load of chopped mushrooms.
I'm disappointed with what I've got and was expecting better results after 6 hours. Tested a piece of meat and it had a large amount of gristle through it, so think it's not had enough time. Am adding things to make it better.
First time out with the slow cooker this Autumn and seem to have lost my knack in using it.

Was still £3.50, so not that cheap I'd have thought...but I take the meaning that supermarket stewing steak isn't really good for stewing!
It's now 1700 ( 8 hours of slow cooking )and I am suspecting my slow cooker isn't heating as it should be - I wonder if it has got stuck on 'warm' and isn't really cooking anything at all - just keeping everything warm!
