as with any variable, natural product you would be better to buy seen rather than unseen.
Physical butchers shop would be great, you must have a farmers market nearby that you can order a roast from for their next visit. They will ben over backwards to help and advise you and make sure that you are a satisfied customer. They will take massive pride in the products they produce and sell.

+1 used them for a few years after a PH recommendation. Steak is just fantastic and don’t think I have ever tasted better. They do courier deliveries in chilled boxes. R_von_S said:

I'm in Kennington. Funnily enough, I used to live 2 streets away from HGW but am ashamed to say I never went in (was an impoverished intern at the time). I read the other day they do (or did?) the meat for Patty&Bun's burgers which I have a deep affection for so they're definitely on the shortlist.https://www.hgwalter.com

A lot of places seem to focus more on marketing and presentation. I’d look for 100% grass fed beef as that is their natural diet - grains are a cheaper way of fattening them.

Organic only needs to be 60% grass fed for example. It helps to be in a part of the country though where the ground supports pasture (generally the SW).
PFLA (Pasture Fed Livestock Association) is a new standard to try and certify 100% grass feed meat. Watch out for ‘grass fed’ labelling as this doesn’t tell you how much grass.
The USDA fans will say the taste of corn fattened beef is better but for me the welfare is as important as the taste.

There was something on radio 4 the other (early) morning debating the sustainability of grass/grain fed meat. I wasn't really listening but the general gist was that in various tests there was only a minor difference in nutrient content between grain and grass with grass fed fractionally higher in omega 3 fatty acids. In taste tests no one could discern any difference between them. If you are a manc go to PJ Howarth in Urmston. Don't leave it much longer. They get really busy for xmas.
Get 4 ribs as its much better value, when you order it ask them to trim it and keep the trimmings in a bag. Then when you go to collect it will be all ready for the oven plus a couple of nice slabs of beef for curry or stew etc or just roasting.

Thanks to this thread I placed an order with T&G. Various stuff, bacon, sausages, pigs in blankets, burgers (black and blue label) black pudding etc.
I’ve had 2 of the burgers for tea tonight.
Oh wow. Those burgers really are something special.
I can’t wait to try the breakfast sausages next.
