Haven't we had this type of thread before:-

Deep Purple - Made In Japan (and all the variants)
UFO - Strangers In The Night
Thin Lizzy - Live and Dangerous (although how much has been overdubbed is a moot point, but its a great album anyway)
The Who - Live At Leeds
Rainbow - On Stage (short and sweet but shows a band at its peak)

I'd also add

Led Zeppelin - How The West Was One
Whitesnake - Starkers in Toyko - superb unplugged album - Coverdale at his best
