To answer the OP's question, Apocalypto is good, just after the guy gets bitten buy the snake. Running through the trees with arrows coming past you is reeaally good. The opening scene of Cars is pretty good too.
Hero from the DTS demo disc was also good.

We use it as a demo disc for the higher end stuff, strangely enough.
For "surroundness", in addition to the many worthy suggestions already made, I'd add:
The gun fight scene in Ronin (just before the first of the two car chases)
Contact - as Ellie is dropped through the wormhole
These give you a good sense of the processing quality but for sonic and acoustic quality, Eyes Wide Shut has some quality testing scenes that require a good system to pick up - such as the party at the Doctor's house. Also try the opera scene with that blue bird in The Fifth Element.

Behind Enemy Lines IMO one of the most underated films of the last decade, I think it had theThank you.
misfortune to launch close to 9/11 and it was buried, the missile chase scene whilst totally
inaccurate is sure to grab your attention. The best bit though is the scene where
Burnett (Owen Wilson) is sat at the top of a Dam the ambiance is stunning then all hell breaks
loose! I won't spoil it but with a good system it should have you jumping out of your seat!!
what dvds are out there that have the option of DTS,
the only one I have is fast and the furious.
A friend of mine had a demo dvd from an audio visual shop and that is in DTS and it previews behind enemy lines, minority report, cars, and some other films, but i remember when he showed me his set up, lots of high tech high end stuff i think it was stacks of naim stuff.
he immediatley fast forwarded to the the scene on behind enemy lines when owen wilson is running through the run down building area and the booby traps were exploding, my jaw was on the floor with the quality of sound and how effective the surround was. he then showed me the part of minoirty report when they are shooting eachother with those funny guns in the hanger, and the surround was amazing from that too.
since then i have wanted to save to get a system like that and a film to showcase it.

I must say chaps, there were a few details about "Pearl Harbor" (sic) that you forgot to remind me about:
1. It's got Ben Affleck in it.
2. It's about 6 hours long.
3. It's your traditional Hollywood story of how the Yanks win the war, capture the Enigma machine and bring about world peace.
4. It shows Cuba Gooding Jnr as the ship's cook who goes on to save the ship. Now we all know that's Steven Seagal's job.
5. It's got Ben Affleck in it.

Probably loads that I've forgotten about, but here's a couple:
King Kong when the planes fly around the Empire State building 'buzzing' Kong. If you have a 6 or 7.1 speaker option turn it on (even on the 5.1 DD version) as it gives a great fly around effect.
Beginning of Terminator 2, when one Terminator in the future scenes shoots; on the DTS 6.1 version and on BluRay the shooting comes from directly behind; doesn't half make you jump especially at reference levels.
If you're into old school rock, then the 5.1 DTS DVD of Queen has some over the top use of the surrounds: A friend of mine was quite impressed when I played him Bohemian Rhapsody from the DVD.
