Although I haven't done so, I would probably watch seasons 2 and 3 again, but I wouldn't bother with any of season 1. It was evident that the budget and the freedom went to their heads, and they forgot to make it any good. It's not a reqirement that the show should be funny, but if it's going to be, then don't use the Allo Allo playbook.
I have rewatched S2 and S3 and the British based episodes of S1. It is not only that most of the stuff filmed for S1 was rather poor the foreign studio audience never worked for me. Just a brief update. James May was interviewed on TV this morning and in response to the question about when the next episode is, he answered:
"We were in Madagascar, in cars. The episode is all edited, but Amazon are saying the release will be sometime this year".
Thats it! He didn't know why it was being 'sat' on.
