Star Trek was always a modernist utopia where technology had freed up our time and allowed us to pursue worthy avenues such as art, literature, etc. In TNG->Voyager everyone seemingly had a hobby, played cards, trombone, was a respected amateur archaeologist or scientist. So it's possible that Tilly is really into home made food- she wouldn't be the first star trek character to complain about synthahol, or replicator stuff. Neelix even made it an excuse to keep him in the show.
But I don't think the writers have thought that far into it. Of course this show is pre- Kirk enterprise and they were all a bit fat in the end so I think it's more of a problem that her character is just annoying and thus attracts flack. The effortlessly overachieving crews of the future who would make Barclay feel like a loser obviously hadn't been born yet.

what's amazing though is that she isn't even the most annoying character in the series.... not by a long way!!But I don't think the writers have thought that far into it. HA! I’ve just realised that the Starfleet HQ guy with grey hair and glasses (Kovich) in S3&4 is legendary director David bloody Cronenberg!
And honestly, watching S4, it’s really got a lot better. Less of whiney Burnham, more action, quite enjoying it.
Sure there are still some really annoying characters, but it’s definitely a huge improvement over S3.

I love how much they talk it up - reading that you'd be forgiven for thinking the whole of TV land has been applauding Disco since Season 1. And not deriding it as badly scripted and with poor character development, even before you get to the woke criticisms.https://intl.startrek.com/news/star-trek-discovery...
And if it was so good, how come there was such a huge clamour for Pike and SNW - and when they wrote that they took it back to original ST format story telling for the first time in decades.
Given SNW has been so well received, and season 3 of Picard has gone back to being ST too, Discovery suddenly looks a bit like ST's less popular sibling.
