Just back from a holiday in Norway and to be honest it wasn't as expensive as I remember. Eating out is expensive but you can live without that as most people cook at home.

How much tax is there to pay? How much is it to buy a car / new or secondhand? Is housing incredibly expensive? How much for a cabin/ hytte?

I lived in Norway for many years and then the tax was terrible, up to 83% and 17% employers NHI, today tax rates are no more than the UK.
If you have never lived in Norway or away for 5 years you can bring in a car you have owned for 6 months before you owned and registered overseas in, My wife did this she spent a few years in the UK and bought a 7 series shipped it in duty free.
A general statement is cars are twice the UK price.
Housing is better than the UK for the same price nor cheaper, my son just paid 300,00 pounds for a flat in Stavanger. A Hytte depends on what you want, a cheap one with out main services is that cheap. I know several people who have paid 500,000 pond for a nice one buy the sea.
There is a lot to think about working in Norway, I.e. Pay UK NHI and you can avoid the Norwegian one for a few years, if your married and your wife goes with you then any accommodation paid by your employer is taxable leave her in the UK its tax free.
So not easy to answer your questions.

Massive tax breaks on electric vehicles, I saw more Teslas in 2 days in Bergen than I've seen in the rest of my life, apparently they don't pay for ferries either.
