We're replacing our garage door with French doors (two side panels, two doors).

This is our current setup:

The frame of the garage door is fixed to the inside garage walls.

We want the French doors to fit closer to the front of the house, not deep set like the garage door.
So in this case, we would order ones to fit the smaller opening (rendered external wall).

But is this the right thing to do? Before I order them I want to make sure I'm not making a mistake. Should they actually be fitted in a similar way to the garage door - set deeper inside?

The bit you've highlighted in, the frame, remove that, replace it with masonry incorporating a vertical d.p.c then have the frame of your new doors straddle the d.p.c. FWIW I like to see windows and door frames set back as far as possible, they're protected from the elements a bit more and it gives the impression of a thicker wall(to my mind at least).
