If you need to go deeper you'll have to fit in a steel section (which one will take some thinking) and join it to the brick each side. Since you said that the wall is not load bearing it's probably easier to replace it with a stud wall.

Pocket doors are not cheap. I looked into a double door option and it was coming out at over £2.5K fitted, and I didn't have to move any pipework.
I'm sure there are cheaper options on pocket doors, but when you see the price of the mechanism you also need to buy the doors and pay for the labour to knock out the old walls and make good.
They are very nice though - you can get ones that slide 50:50 into the same wall if that helps? just need a thicker pocket (just like an elevator door).

To be honest the bathroom is being changed anyway so there is mess and distruction whatever happens. We're not moving and use that room several times a day every day. If there is an expensive option that works I'll pay the extra because otherwise I'll spend the next 15-20 years until the next refit wishing I'd spent the money.

Ok, pocket door vetoed. Bathroom fitter says that he has fitted them before and if you don't build a strong enough wall and you lean on the bathroom tiles when the pocket is empty the wall flexes, the grout cracks and you get a leak. We have so little space to play with that I'm going to go with his advice.
So, in the absence of a van door mechanism I'm going to look at a folding door that opens outwards flush to the wall using a Parliament hinge. At least I'm getting somewhere.

I made my own. About 80 quid for the track; two 8x4 sheets of 22mm ply and some wooden studs to make the pocket and that's about it. I think https://m.youtube.com/watch?v=_XOCDLrfwh8 would make it look far more like a dodgy dungeon room with the visible bars!!Have to say it does sound like a lot of faff for relatively little gain, but clear you are determined to find a solution....could you add a small sink elsewhere for teeth brushing?! Probably rather old fashioned nowadays.....our bedrooms had them when I grew up!
FWIW, we considered pocket doors for an extension we did 9 years ago....our architect said they didn't save much space because of the wall depth needed, and they were rather prone to operating issues down the line.....so we went with his advice. I'm sure the tech has come on somewhat, but it may boil down to how well it is fitted too, I would think.
