I think they key is to try them.

I read up on lots and have now tried 3 about to try a 4th.

Otty - great service, bed too firm, no back ache for me but uncomfortable even with an M&S topper

Latexsense - they suggested a medium - seemed really soft but was lovely to sleep on (for me) my wife had terrible back ache. They suggested the firm - now we both have back ache.

I think we'll try sprung next as we can both sleep fine on an old sprung mattress that was relegated to the spare room when we went to a super king.

I was going with John Ryan but a few reviews say they don't last that long and I expect a £1000 mattress to last 10yrs.
Well the general recommendation seems to be to replace your mattress every 7-10 years and JRbD guarantees vary by model all the way up to 10 years so evidently they're realistic about what to expect from each one (and confident to guarantee them as such)...

Recently swapped a quite expensive Relyon box sprung memory foam topped mattress for an eve and its very comfortable in comparison and not mega expensive.

But their idea of fine and mine differ.

Read the (admittedly few) poor reviews people with bad backs (I'm one of them) are finding they are getting a bad back after a couple of years JR expect some sagging to occur.

My old mattress - well over 10yrs - has NO sagging and cost around half that of a JR

If I could buy the same again, I would but they are no longer available.
