Cutting a large circle out will mean you need to support the edge somehow and it will introduce a lot of flex in the top.

Cooking with a pizza oven is 10x easier when it's closer to eye level. If you do want to combine BBQ and Ooni on the same table I'd recommend adding something that raises the Ooni up.
