Check the NASA website and see if there are any launches scheduled for the time you are there - although not as impressive as a shuttle, an Atlas rocket would be good to see launched (from 5-6 miles away though).

Would advise this as well, managed to get VIP tickets for a shuttle launch in 2009 meaning that we where as close as anyone is allowed to shuttle and it is something I will never forget.Hoping to see a launch in August . . .

Be mindful that since the closure of the Shuttle program, no launches take place from KSC, but rather the US Air Force Air Station on Merritt Island, to the South East of KSC.
This is good news, because the public can get closer to the pads used for launching these rockets.
The best spot is undoubtedly Jetty Park at Port Canaveral
Atlas V launches go from LC41 which is the most distant from Jetty Park - and are better viewed from Old Haulover Canal, Titan goes from 40, Delta from 37B and Delta II from 17, which is less than 4 miles across the inlet from Jetty Park.
I'm not a rocket geek, my next door neighbor is a propulsion systems engineer at Lockheed Martin and he educates me and invites me to launches quite frequently. That said, we are lucky enough to see them from my back yard if it's not cloudy.
Added bonus of these rocket launches are the accompanying spectacular sonic booms generated during the climb-out.
