Welcome to one of the anomalies of US car rental!
For the more common car groups, if you're a UK resident insurances (CDW & ALI) will be included at no cost. However, for the more "exotic" types, such as Mustang Coupes (even V6s) or any V8 coupe, the insurance is not included - that doubles the cost.
The good news is that if you fancy a convertible they're happy to rent you a Mustang convertible at the inclusive rate; why a convertible should be considered less of a risk than a coupe is one of life's little mysteries!
If you can get a V8 at a price you consider acceptable, go for it; I had a great 3 weeks with a Hemi Challenger. On the other hand I've had a lot of fun with V6 Mustangs. . . 305BHP isn't exactly underpowered!

Done that. Booked a Mustang in May for rental in September. When we arrived: "sorry, no Mustangs". We were offered a convertible, which I said I didn't want; after consultation with his supervisor the agent came back & gave us the location for our car, so off we go . . . there it is, a nice red Mustang . . . convertible. Back to the desk, a lot more consultation & eventually we got our Mustang, well over an hour after arriving at the rental centre. We'll never use Hertz again.A word of caution about Sixt. They have geographical limitations at most, if not all, of their locations - check if you want to take the car out of the state where you're renting it.
Please do NOT use Hertz.
We have just returned from a tour of the Western U.S. Booked a V8 Mustang and a Challenger through the Hertz Adrenelain Collection on the basis that you were able to specify the exact car you want. Booked and paid for last year.
Arrived at Vegas to collect the cars. After queuing up for ages we were met with blank stares and told they hadn't any Mustangs and had not had a Challenger for months.
They then tried to fob my friends off with a V6 Mustang with serious rear end damage. We were told we could have a Boxster. Perfect with two bloody great suitcases!
After at least an hour we were offered Hertz vouchers as compensation which we refused.
In the huge rental car garage there was no evidence of any Adrenelain Collection cars. Very, very disappointing.
We have just returned from a tour of the Western U.S. Booked a V8 Mustang and a Challenger through the Hertz Adrenelain Collection on the basis that you were able to specify the exact car you want. Booked and paid for last year.
Arrived at Vegas to collect the cars. After queuing up for ages we were met with blank stares and told they hadn't any Mustangs and had not had a Challenger for months.
They then tried to fob my friends off with a V6 Mustang with serious rear end damage. We were told we could have a Boxster. Perfect with two bloody great suitcases!
After at least an hour we were offered Hertz vouchers as compensation which we refused.
In the huge rental car garage there was no evidence of any Adrenelain Collection cars. Very, very disappointing.
Depending on what your used to but i had a V6(?) Camaro for a day and a turbo'd convertible Mustang.
Found both sluggish though the Mustang a better steer. im guessing the S stood for sports as the noise/gearchange/accelaration slightly improved when pressed. What was odd was that if i booted it, it would be caught out turbo lag style but if you pressed the cruise button (set at 85) @ 60mph, youd get a massive surge that you wouldnt get in manual auto mode.
Also, dont forget that you have to pay for petrol before you fill up. Nobody told me this so i stood around like a dick for 5 mins trying to figure it out. Then i paid and muscle memory kicked in and i drove off without filling. Luckily though, any petrol you dont use, gets refunded to your card

I am just back from Florida and also did the standing around at the pump like an idiot thing..
Also worth noting that the colours of the nozzles are reversed so that diesel is the green pump and petrol is black!
I've just come back from Orlando. Rented a Camaro SS 6.2 V8 Convertible through SIXT, all inclusive aoart from Toll Pass, was £400 for 3 weeks. You need to book the STAR category, which is the full size convertible. There's no need to book any special 'Performance' sector car to get an SS Camaro convertible.

That sounds ideal!Drive a 964 C2 and had a Cayman S for 2 years before that, so used to having a bit of poke, nothing crazy though. So would rather go for the most powerful I can get, otherwise can see myself being disappointed! That's the trouble with driving a quick car daily, you get used to it and other cars just feel slow! Nice problem to have though so I can't complain.

It was slow (relatively), not that good to drive and had woeful visibility - when I dropped it off and then flew to Atlanta and picked up the next hire car (Chevrolet Cruze) I was much happier.
Also had a Mustang (V6 again) in Vegas in March - it was mileagey (40k) and seemed better than the Camaro but still nothing special....

I was in detroit about a month ago and hired a 'speciality' car from them which cost just over £200 for 8 days.
When i got to their offices they had a row of cars out the front for me to choose from. There were a range of infitis, mercs, dodges and mustangs. I went for a brand new shiny red mustang in the end and was very happy.
Only had 2000 miles on the clock, and although it was the v6, it was nippy enough to smoke the tyres and have some fun.
i also found an iphone 5s in it when i handed it back, which was a bonus

Hertz did that to us. We paid extra to specify a Mustang but on arrival at LA there were none to be had. They offered a Chrysler Sebring , or some other very small convertibles which would not take our luggage. I booked to have a mustang convertible out of Miami and was given a Chrysler 200 crap .i complained and was told I could change it the next day at a different location off of the airport. Another branch changed it for a brand spanking camaro convertible . Join avis preferred lots of free benefits.

Sixt were only advertising the V6 Camaro, only £200 for the 5 days I'm down there though.
I did think about a big yank truck. Once I've paid the 964 off, I can see a Dodge Ram or an F150 making its way on to my drive to go along side it! If I can't get what I want with the Mustang or Camaro, will go for a pick up.
