Driving to Nyborg, Denmark and back

We're visting some family friends on Funen in Denmark for a day or two in early June and want to make it more of a 2 week trip.
We would like to go to Bruges, so will probably stay there on the way out, but have no idea where to go in between.
I don't know if we would go over to Zealand to stay anywhere, though might explore a bit as we haven't been since I was 4 or 5 20 odd years ago, but tthought about crossing back over at Puttgarden-Rødby and drive down to Lake Muritz/Waren area before going back across.
I use a wheelchair so sorting hotels etc. can be a complete pain in the arse (you can forget getting deals on likes of Expedia etc..), so we'd probably look to limit number of hotels and say a few days in each area we might stop, though places like Ibis would be good enough and usually easy to sort rooms.
I've been to Cologne before but it would be good to look around north Rhine-Westphalia more, Dusseldorf too maybe (more , for my part of the trip with going to Bruges too), if it's practical with arranging hotels/driving time may be open to going further south in Germany.
Any suggestions?

Hamburg is a good city to aim for, and also the coastline around the Lubeck area is really nice. En route to the ferries as well
Edited to say I just remembered there is a huge trade event in Dusseldorf from 31/05 to 09/06 - the chances of getting a hotel room will be slim….
