Nuremberg trip- advice

Hi All,
Me and the good lady booked last minute flights to Nuremberg a week ago for a few days away. The problem is that we don't know too much about the city other than the obvious links to the Nazi party and the castle.
Does anyone have advice on where to eat, visit etc.? I would be up for a day trip to somewhere local if it was worth the journey.
Any advice would be appreciated.

All i know is, make sure you get the spelling right!
Last year i asked Aviva to book me a flight home from "Nurberg" which they mistook for "Nuremberg", so they booked me a flight from Munich, rather than Cologne!
Was only when i looked on the map late evening prior that i realised my predicament...........

Christmas market is in the Hauptmarkt (main town square) and is a good place to wander around drinking gluwine and eating Nuremburgr bratwurst (the small ones!!).
Take a guided walking tour of the old walled town which gets you into some of the old cellars - interesting.
Lots of good restaurants a short distance from the town centre. We stayed in a hotel right on the market square - brilliant.

Was only there for 24 hours before heading to Oktoberfest with some mates but i thought it was a lovely medieval city
Very good beer and nice food head here http://www.hausbrauerei-altstadthof.de/en.html, they seemed rather keen on Irish bars but the couple we visited were decent enough for a drink
I hear Bamberg is worth a day trip and full of micro breweries

Only been to Nurnberg once.
Wife and I booked a trip on the ICE from Munich, but due to a leaving do ended up with appalling hangovers and found ourselves travelling there on the hottest day of the year.
When we arrived we were greeted by a Neo-Nazi rally (I kid you not!) near the station.
Once past that, and hangovers not withstanding, we found it a pleasant city to visit.
Anyone know why it's called Nurnberg locally and Nuremberg everywhere else? It just a Bayerisch dialect thing?
Back in the day when DTM cars were interesting I used to toy with the idea of going to watch the Norisring round, but I don't suppose you can buy tickets in reality as the stands are always full of bussed in Audi/Mercedes/BMW flag waving drones...

German name is Nürnberg (not just in Bayern), just has a different name in English, like Cologne, Münich etcM
really pronounce the ü 'ooo' and the 'berg' a bit more like 'bear' than 'burr'
berg = mountain
burg, like Nürburg (-ring) means castle
I went about 6 weeks back on my own.
lovely place, I wasn't able to book a guide so found an app which give you a voice guided tour around the city, it was pretty good.
It is a lovely medieval style town and I made the trip to the rally point which is interesting. Only had the day and getting around is easy I used a travel app and bought a day ticket. Public transport is very easy. Had some ribs from a rib place, very nice and a take away from kebab vender near a church.
I got the train to Stuggart 1st class (not really but separate compartments) and worth the trip for the Porches and Merc museum.

Always confuses the hell out of me, Koln/Cologne, I can see (it's passed across borders over the years), but Nurnberg/Nuremberg is just plain odd!
