I asked my wife what she though of as typical American food. Her reply was "biscuits & gravy". Biscuits & gravy is a common breakfast dish, its distinguishing feature being that it ain't biscuits & it ain't gravy! More like scones & white sauce - what we call gravy, Americans call brown gravy.

On the subject of breakfast, at the places you'll be visiting you'll probably be denied the opportunity to try that Southern breakfast staple, grits. You're not missing much - it's a sort of tasteless semolina-like substance. However, a Southern dish, served as a dinner main course, which seems to be slowly spreading northwards & westwards is shrimp & grits. Done imaginatively it's very good.

Prime rib au jus, yummy. One thing the USA do better than anyone else.

I should have added in my previous post that if you want edible bacon in the US, look for Canadian bacon.
