Usually I just book a compact when it is the 3 of us (3 adults and one child in a group 1 seat). However on our next trip to Biarritz/San Sebastian, we will be travelling with another couple, so trying to work out what hire to book.

Would something like a C Max (Grande?) fit 2 adults and a child seat across the back with room in the boot for 5 cases?

Best solution is always going to be two cars, unless you are going to stay in one place for the entire time (in which case, get a minibus (driven by someone else).

Was hoping to avoid 2 cars!

We usually hire a minibus of some sort. At least Ford Galaxy size. The extra cost is not much more than a medium sized car in my experience.

You've got to accommodate 4 adults and a child in reasonable comfort, there is no point saving a few pounds and squash into something that means you have a suitcase on your lap.

To close this off, we ended up with a Peugeot 5008 7 seater, which had enough room for us all and our luggage.
