40th Birthday trip ideas (with kids)

I'll turn 40 next year and would like to mark it with a memorable family holiday. Our kids will be 6 and 3.5 by then, we could swing a solo trip just me and the mrs but think the most would be 3 or 4 nights, me and a group of mates all turning 40 a similar time so we're going to do a weeks skiing.
We'll probably extend the invite to my siblings who have kids a similar age. So would be looking for somewhere most likely in the summer school holidays although Easter may be doable too to coincide with the school holidays.
Something with good weather, beaches and activities for the kids. We've not been to Florida but think the kids particularly the youngest may be a bit young? Caribbean, we've done a few islands and Mexico pre kids. Mexico is well geared up for activities etc. Thailand and Vietnam did solo but a bit too far and faffy with flights.
Then there's closer to home, my only reservation it's something we've done and will continue to do (unless COVID kills the travel industry for good).
Anyone planned similar?

At 6 and 3.5 there will not be any chilling before 7pm unless someone else is looking after the kids. And they will need a kids depth pool. And naturally when they are near water you have to keep a constant eye on them lest they drown ot hurt themselves.
At that age, they wqill constantly want to play with the parents and not leave you alone, unless other new and exciting kids are there to play with and activities in abundance.

Depends on budget I suppose.
For my 40th I went to Dubai with the missus and my then 3.5 year old. Wonderful service, great weather & relaxing time for all of us (apart from the moment my 3.5 year old son shouted in the market "look batman" at the top of his lungs when he saw a local lady in full burka....but that's another story !!)

We won't have been abroad on holiday since 2018 so happy to push the boat out.
I've flew through Dubai many times but never appealed to me personally.
Probably not what you want to hear but given the age of your children, I would say wait until your 50th! Or delay Disney for a years and celebrate your 45th!
Maybe push the boat out with you and your wife for a nice weekend away doing something you want to do and have a normal(if that is possible this year) holiday with the children.

take a look at sri lanka. stunning place, very friendly people, kids will flip their lid when they see elephants and monkeys in the wild. rent a villa down south and consider a float plane transfer.
Went there for part of our honeymoon. I would not take young children there at all IMO. Yeah, there are elephants, but it certainly didn't strike me as somewhere I would want to take my young kids now (6 & 3) I'd second a villa with a pool along with friends and family.
Florida, especially Disney can be hard work at times, personally I wouldn't take a 4 year old. We took my son when he was about 8 and he was knackered. We met an American mum having a meltdown in the monorail at Disney with two toddlers. My Mrs had to stay with her for 30 minutes to help calm her down.
As an aside my lad once asked a waiter in a Chinese restaurant if he was a ninja. Waiter replied no but was in WWII shooting the English

We took ours to Florida at 20 months. Holiday was booked on a bit of whim and he was quite young, but I think we all had a good time. Villa was great and the boy enjoyed the water parks especially. I'm now targeting 9 and 6 to take them back. They should at least be tall enough for most of the rides and compared to now I hope the queue better too. Also 2 1/2 years should be enough for us to recover from the pandemic
