Hire a car and just drive up around the mountains, some fantastic roads and views along the north west coast. From Soller, through Deia and Banyalbufar then Estellencs along the coast road all the way down to Andratx is a fantastic ride with incredible scenery. Valdemossa is also worth seeing. You'll get a feel for the real Mallorca, not the chav infested hole thay Magaluf portrays...
Mallorca is stunning. I used to dismiss it as the 60's cliche it used to be but there is so much to do there and it is truly picturesque.
Soller railway is a must, Valdemossa is a must - most of the good beaches are over around Cala D'Or but Cala Pi is in the south and not far.
Just get a hire car and drive.
We're going again for the 3rd time this September.
Personally, I would avoid Alcudia and even Puerto Pollenca is nothing that special.

As someone else said, hire a car for the day and head off into the mountains, its fantastic. There's also a few caves around the island that are "interesting" in that waste a bit of time in the day.

You'll only be able to afford 1 drink, but trust me its about as classy a venue you can get, your missus will love it.
If you want classy bars and restaurants head to the old city, and take the missus for a night time stroll around the Cathedral.
If you want to party just walk down the main street by the marina's and make your choice of numerous bars(they won't get busy till 11pm at the earliest), then drunkenly stumble in Titto's night club for over priced drinks, fairly decent music and oiled up dancers that descend from the ceiling(men and women, so the missus should be happy enough).

If your after a really nice restaurant one night try Meson Can Pedro in Genova which is a 10 minute drive/taxi ride outside Palma

The other thing to note when driving through the mountains is that the Spanish are freakin' insane and you will regularly encounter groups of racing bicycles emulating the Tour De France with riders capable of pedalling up vertical faces using leg muscles apparently hewn from solid muscle.
On the narrow road issue, when heading north through the mountains, you'll see a little port below that looks inviting but this has the same narrow road and turning round issues. Hire a small car to get the most benefit. We had a Picasso the first time and it was horrible. The second time we had a Fiesta and it was great.
