I'd say 30 - 60 is middle age, but it depends on the individual too. Some people are middle aged from their mid 20s and some people stay young into their 30s.
Stages 5 and 6 if you take Shakespear's guide, 'fair round belly with good capon lined, With eyes severe, and beard of formal cut' through to 'Into the lean and slippered Pantaloon, With spectacles on nose, and pouch on side' are defintely middle age.
