I've met a few, but the two that stood out were:

Helena Bonham Carter - 1991, she was staring in a play in Nottingham and after seeing it I bought her flowers the next evening. She bought me a beer and we had a good chat before she gave me a polite kiss on the lips and told me she wasn't the person I thought she was. Thing was, I had no idea who she was or that she was actually very famous, I just fancied her!

Quentin Tarantino - A couple of years or so later. I had a bar in Nottingham (interesting fact - the global premier of Reservoir Dogs was in Nottingham) and he was back a couple of years later, before Pulp Fiction was finished. Basically he was staying at the hotel next to my bar and came in late one night. We had a lock-in until about 5:00am the next morning, got completely wasted talking about movies and his plans for Pulp Fiction. Incredible night!

Jazz Legend, Herbie Hancock.
He's the only person I've ever asked for an autograph, too. I don't normally see the point but he already had a pen out for something else anyway so it was more a case of 'while you're at it...'
