The only definition I've ever seen for that refers to plural words where the plural usage has become obscured through time, so an additional plural ending is added.
I just remember an example from school.

The boy's book - 1 boy, 1 book.
The boys' books - 2 boys, 2 books.

And AFAIK if Sheers is a name you can use either Sheers' or Sheers's as the possessive. In any case there is no change to Sheers if there is more than one gallery.

On the subject of names which end in the letter s, I remember a chap whose surname was Masters. Cue a colleague spelling it Master's at every opportunity. Freddie Sheers should never have his name manipulated to include an apostrophe. The apostrophe would always come after the second s.

(Just in case anyone was in any doubt - others have explained it perfectly well.)

I'm going to hate myself for asking this but...

If Freddy Sheers' Gallery is correct, then how come the well know pubs are Yates's and not Yates' ?

No - children is already plural. There is no need to add an "s" to it except following an apostrophe to indicate possession. The plurality of the owner is independent of the plurality of the owned.

Children's books = many children, many books
Child's books = one child, many books
Children's book = many children, one book
Child's book = one child, one book

Childrens' books = nonsense.

Freddy Sheers's Gallery could also be correct - the decision is often based on which is easier to say (and which looks better in print).
