That has been done. Sometimes it's appropriate and sometimes it's not. It depends on all sorts of factors as to whether you want to do it that way.

The time that takes (which is usually a budget and resources consideration as much as anything else)
The availability of a handy planet (you really need a planet rather than an asteroid or comet to give you the necessary change in velocity)
The size and mass of the space probe
The size of the launcher rocket available (another budgetary consideration)
