Having nothing but issues since I've started driving
Was down a rubble road today and went over a small hill type bump
Heard a loud crush sound and then got some rattling on the way home
Looked under the car to find this (see images)
I have taken the pics where the damage is, looks like some kind of cover or something that's taken a hit, I'm really not sure what that is

Looks to me like your under trays have come loose and are rattling against some of the piping.
I would see if it can be reattached to those clips. In the event the clips or the holes they utilise are buggered, you could get handy with some cable ties. Make sure you use big strong ones if you do. You may also have to drill a few holes in the tray to attach it to convenient places.
My plastic MR2 undertrays are almost exclusively held on by cable ties.

Your heat shields have come loose - probably the mounting points are broken off.
What I have done in the past - on rallies where we've had to make running repairs under the car and not had a lot of kit - is to find the highest bit of pavement you can, and park the car with 2 wheels on the pavement, but as close to the road as you can get. This should give you enough room to crawl under the car and inspect/repair the damage. If it's just the heat shields you should be able to bodge something as a temporary repair!

The impact has shaken the heat shield loose, the clip has pulled through the hole. Pic 1 shows the clip & its bolt.
You may get away with bending the edges of the hole back into place then reattaching the clip.
Or bit of metal larger than the hole & bolt that back up with the metal holding the shield up - a bodge for the metal would be a flattened out food tin.
Or the cable ties as already suggested.

If it is a heat shield rather than an under-tray, I would use the stainless steel zip ties rather than plastic ones You may get away with bending the edges of the hole back into place then reattaching the clip.
