Car based pickups

I won't go into the story of how this came about but I am in the situation where my new project car is going to be a car converted into a pickup.
I am looking for advice on which car to use for the project.
The choices I'm looking at so far are:
My Mondeo ST200
Mk4 Astra van
Mk1 Focus estate
Mk4 Golf estate
If anyone has any suggestions they will be gratefully recieved as I'm kind of lacking insperation at the moment.

It does. Years ago I had a dream where I drove a Ford Scorpio (the 'guppy' one) pickup, where the load bay came down to the level of the chrome strip across the back.
Since then, no cheese before bedtime for me.

I have a question and a dodgy MS Paint photo edit.
My question is, what would it take to do the following properly/legally and safely? How much bracing would I need or what other considerations would need to be considered?
Not thinking of doing it anytime soon but I think it looks quite cool!
