I'm consistently around 0.2 which I'm happy enough with - it's about the same as when I ran at santa pod 18 years ago! Not aged too badly then
Interestingly, I found my thumb moving a few mm to tap the screen was more likely to jump start than my left foot used to be at moving several inches to dump the clutch. Shaky hands from too much wine these days perhaps

In track and field athletics, they have sensors in the starting blocks and the allowed reaction time is 0.100s. If you get 0.099 you’re getting disqualified for a false start, as no human can react that quickly to the (audio) start signal. And yes, they’ve done extensive testing on athletes, and couldn’t find a 100m runner who came close to 0.1s without anticipating the signal. 0.2 is more usual.

100%Touch would be much easier
