I'd say you're probably right. I think Ferrari probably would do fine without F1. I don't think many of their customers really think they're buying the pinnacle of performance due to seeing them racing in F1... They buy the cars because a) It's a Ferrari. b) heritage and image, they're a thoroughbred sports car c) it's a Ferrari. All hypothetical though, neither F1 or Ferrari are in any rush to find out for sure just in case... !
Fairly certain audiences would diminish if F1 lost Ferrari, but then Mercedes are probably wealthy enough to plug any financial gaps for Liberty and/or the FIA.
F1 would become more niche as a result I think.

It's been a great season. Lots of drama on track unless you think the only two cars that matter are whoever is in 1st and 2nd, Some new tracks and revisits to old ones have spiced things up with a lot more driver mistakes, Racing Point have become more competitive, Renault are getting results. Cars are overtaking eachother. Max is putting in some incredible drives reminiscent of Senna's standout drives for Lotus and in 1992 / 1993 and Seb is driving an articulated Ferrari.
Formula 1 has always been about 1 dominant team, and seasons where two or more manufacturers have competed on even terms are occasional crossover points as one team moves in to dominance and another moves out.
