dang, you beat me to it I was about to say - I'm planning to sit in as many different cars as possible in order to decide!The OP has already addressed the issue but all the cars mentioned bar the Juke are old and will require a lot of TLC to keep on the road, which is expensive if you are paying a garage to do it. The garage of Dad will be getting plenty to do I think!
Other 2 seater possibilities you might consider are:
Nissan Figaro(Micra in a frock)
Reliant Scimitar SS1 or Sabre(your age may mean only the 1.3 or 1.4 are insurable)
One or other of the Japanese K-cars; Honda Beat, Suzuki Cappuccino, etc.

oh ok, that may be something to consider. I have read reviews on the Suzuki Jimny, and a lot of them say how terrible the space is, especially in the rear seats. I'll have to sit in them, and figure out whether I could live with them. hidetheelephants said:

I love the cars you've suggested - this may seem like a stupid question, but would cars from the 1990s be more reliable than cars like the Frogeye which are older? I'm assuming yes, but then you can get this old things that go on for years.
Regarding the insurance, make sure you get a quote for each car with and without a full driving licence. Back when I was learning, I got some fairly cheap quotes under a provisional licence, which increased by several thousand simply by gaining a full licence... You don't want to end up with a car you can no longer insure after passing your test

Quite nice looking, if a little boring on the inside... What makes them more appealing is that they're pretty much impossible to kill, and should be cheaper to insure than the KA (fingers crossed).

You need to look for obscure cars that aren't typically driven by 17-21 year olds. Maybe an old Volvo (although maybe a bit too dull.. )? Also try bigger cars such as Mondeos - I insured my 220 BHP Mondeo for ~£1,500 a couple of months ago at 19, although insurance for the same engine in the smaller Focus ST was more than double that.Just done a check, and a 2001 Ford Ka is over £3000... which is a little excessive.. 2 seater sportscar, old enough that you might be able to get classic insurance, well built, good to learn DIYing and fun to drive.
I suspect insurance would be the nail in the coffin here but it could be worth a look.
I promise not to recommend any remapped BMW diesels though.
