My missus always says "Do you always drive like this", errr, no, I drive much faster, I call her
the "Organic Rev Limiter" or "Fun Police"

It seems odd that that would outweigh the amount of claims for cars hit while parked on the road, a much more common occurrence surely? My Insurance is notably cheaper if I say my car is parked on a (very narrow) street, as opposed to in the car park around back.

I also find it very strange that they don't seem to require any evidence that other people on your policy will ever drive your car. I have my dad on mine, knocking it down by a good 15%, despite him living on the other side of the country.

What evidence could they ask for? Just because he lives on the other side of the country, he may visit occasionally and drive. You may include your mum or gran in case of emergency, and that emergency never arises. You're still entitled to add them on. You're not asking for a discount, the insurers are choosing to give it to you.
