Stick shift or Paddle shift?

I find all types of gearbox work well enough on the road, but all have a different character. I prefer a proper manual when you're "on it", but for 90% of the time it makes no real difference to the enjoyment I get from a car.
On track however, I found anything other than manual to be utterly dull and boring. I hate to use such a cliché, but it's like playing a computer game, and not a particularly interesting one at that. All the manuals I've driven were fun (MR2 Roadster, 996 Turbo, F430, Caterham) and both the paddle shifters (F360, Gallardo) were surprisingly rubbish. They were very capable cars, technically impressive and quick, but I felt absolutely no desire to own them, it was just as if half of the driving experience had been removed. Odd that I don't think this shows as much on the road, but that's just my experience.
The availability of a manual 'box would be a deciding factor in what car I bought if I was in the market for something special.
