Not a V8 (or any cylinders in fact), but have you considered an RX8? Not especially fast, but it's a wonderful chassis and the engine at least has some charisma. You might even find a V8 converted one if you're really lucky.

RS4 B7 Saloon or Avant. I had the saloon and it really goes well.
I don't agree about the M5, I own an E61 and have as much fun in it as I ever had with my Lotus or RX8. It's what you do with them at the end of the day and with the DSC off you can smoke the back wheels when you want which is not easy to do with the limited power of the go karts.
M3 in V8 form is quality but the older straight 6's do nothing at all for me and feel really underwhelming on the power front compared to the E90.
Have you ever driven the B7 S4? It's not as quick as the RS but it's still a great car with a really revvy punchy engine and the Quattro is as safe as houses.
