Sorting insurance when buying car

Ok I think I'm making my life complex.
I'm picking up a car on Sat.
I still have the old one. And will need to carry on the insurance until it's sold. But I want to move it's no claims to the new car.
I can't swap the car on the existing policy, as the new one is not modified. But they will refund £247 towards the new policy (with the same broker). That policy would be £813 (-£247 refund). Which is about right.
Ok so now I have to insure the original car from scratch while it's up for sale.
I do have a quote from Mannings which includes track cover for £997. Basically £200 for track cover, on top of a road policy, which sounds quite good.
But can I move the no claims from the current policy to the Manning policy without ending it?
I should just cancel the current policy, get my refund in a cheque, and start from scratch with both cars, using the no claims on the new one? Right?
(Then we get into swapping the number plate...)
