I bought this 1991 Audi 80 recently as a usable 'classic' and I like it a lot.
It's a 2.0i 16V quattro - a nice mix of modern comforts and old-fashioned feel and gets a surprising amount of attention.
It's well-built, rust-free (galvanised) and cheap to run with 30+ MPG and classic insurance. It has a nice interior with sport seats.
It's not that quick due to the 4WD sapping some of the 137 horses but it's still nice to drive and it's a very rare car these days (approximately 12 left on UK roads).

If you're interested in the Prelude, this is worth a mention:
It will hassle a DC2 round the twisties and is better screwed together, galvanised so no rust issues, cheaper to insure, more comfortable for long journeys (particularly if you are of a wider frame and thus a bit big for the DC2 Recaros which are designed for 80kg JDM fellows).
Your £2500 could see you in a pretty tidy facelift 2001-2002 model.

The owner of a local Audi specialists that I took it to tried to persuade me to sell it but I can't think what else I could buy in such good condition for that sort of money. It's got every MoT certificate, a fully stamped service history and has averaged just 4K miles a year. It's still shiny under the arches!
There's a red early 'B3' 80 quattro on Ebay but there's no mention of the mileage or history.
It looks like a basic 8v version with black bumpers and without the Speedline split-rim style wheels.
It's got the sport seats, VDO instruments and Audi Sport steering wheel though so it might be worth a look?

If you don't need 4 doors, hat about an Audi Coupe? The early ones look great (IMO) and you have a great choice of engines and specs.
They are excellent value as long as you choose wisely...I like the sound of the red one below.

Pah, the image is irrelevant, the drive is everything! A couple of teutonic suggestions.
This E30 320i 4dr looks great IMO and is currently bid under budget:
http://www.ebay.co.uk/itm/160852633213
This very original Golf GTi Mk2 8V 5dr is £500 over budget but might be worth a punt as it looks a peach:
http://www.ebay.co.uk/itm/290752047804
Having owned both, personally I'd go for the Golf but either would make a great daily with a difference.
