Do you just mean the badges stuck on by the manufacturer, engine size, model name etc?
If so, they're usually just plastic with some sticky pad on the back. Get a hair dryer onto them to warm and soften the glue up then carefully prize and peel them off. Once they're off you might need to go at it with a small amount of polish to get rid of any residue but that's it. 10 minute job start to finish.

Yep exactly that. I used dental floss to get under the letters once softened with a hair dryer, a simple 10 min job. If so, they're usually just plastic with some sticky pad on the back.
