Cobra everyday, as has been said theatre and V8 but also I also prefer the way it looks as well, preferably in dark metallic blue with the white stripes (it'll be the AC heritage that does it for me, a bit more curvaceous than the Caterham).

Cobra, but this one by Peter Walker http://walker-partnership.com/ Reviewed here: https://www.youtube.com/watch?v=T7i-g2Fo_tA

Peter Walker is the designer behind the Dax Rush and Dax Cobra replica and his new car the XCS has his patented camber compensation system on both axles. Very good system which really works well. Same system Duncan has on his turbo Dax Rush here https://www.youtube.com/watch?v=7c_oXNVm2r8

Caterham - appeals much more to my philosophy for what driving's about.

(other philosophies are available)

Well, I've got a Cobra (Not a GD though, which really are pukka) and I'm considering changing it for a Caterham, but really can't make up my mind.

I'd be intrigued with the decision you make and why you made it.

Cobra would edge it for me as they're gorgeous looking cars and 600bhp would be mental!

If you're planning track driving I'd imagine the Caterham to be more suited to that but for weekend sunshine drives it's the Cobra.

A K-Series R300 Caterham is all you need, perfect balance of performance and usability for road and track driving. If you want something newer (Duratec), Supersport (270R) or Supersport R (360R). I'd be scared of losing my licence very quickly in an R500/620R!

Depends, if I'm tracking it on a regular basis the Caterham, otherwise the Cobra.

I don't think 'all you need' is part of the equation when choosing cars like this. However I agree with you and an earlier reply, I'd look at the less extreme options. I'd love a Cobra, but of the two I'd buy the Caterham.
